I remember trying to get vegetable that were not cooked in fat back..... I went hungry. Fatback is NOT vegetarian. Even if you live in the south.

I also spent 5 minutes trying to explain to someone that yes, you could live with bacon in your diet, and no, I did not eat it, I am a vegetarian, that means I do not eat bacon, although they didn't seem to understand that.

Nowadays, a lot of restaurants are embracing the healthier food movement. Shit only certain grocery stores (usually in the more rural areas, like where I live) even sell fatback anymore. It is sort of a novelty/specialty item now, like a lot of the shittier pork products people down here love.

That isn't to say southern-fried cooking is hard to find down here, it is quite common, but your classier establishments are usually pretty decent.







But bacon is always an option.

I find it high-Larry-ous that BacO's are straight-up vegan. And for a non-meatatarian to be havin' bacons or the like, ex-animals, expect to be a fair bit, persistently and virulently.

Now, fatback isn't something I've seen around here, but in some of the more ethnic neighborhoods around Buffalo, grocery stores that have significant Polish or African clientele have... some more curious parts of things on hand. Tails and tongues and feets and lungs, oh my!
