Bro. You will love slow poached eggs.

Get a precision thermometer (thermapen is the best), a steamer screen thingy, pot, water, etc.

EVERYTHING IN THE POT! Heat low and very very slow to 140f, and stabilize the temp. Put eggs on the steamer screen thingy so theyre not in direct contact with the bottom of the pot. Watch that thermometer like a fuckin eagle, for 40-45 minutes.

It changes the texture and the flavor of the egg, and cooks it... mostly but not all the way. So you'll have a creamy velvety cloudy egg.

Now you have an egg that you can do whatever the hell you want with. Throw it on hot soup, noodles, eggs, pizza, whatever. The heat of what you throw it on will finish it up. SO FACKIN GOOD.

Apparently this is a thing in Turkey, so I'm calling it TURKISH POTATO STAND BAKED POTATO.


As usual I am not going to be too precise with the measurements.


Stab a russet potato with a fork and cook it in your microwave on its potato setting. If your taters are small use one and a half.

Might as well be using the dish you would be using for the second bake already, in the microwave.

When it's done take it out and cut it in half. Lie them peel down in your dish, and put cheese and butter on top. How much? The amount you think is suitable, plus 50%.

Use a fork to mash the butter and cheese into the potato flesh, until it is somewhat homogeneous.

Put it in the oven at 200C /392F.

Bake it until the peaks of your potato-dairy mashings are turning brown.

While it's baking you can make the toppings. Basically anything savoury goes on there, from salad to sausage.

Before putting the toppings on I salt and pepper it.

She is stimulated by the fresh baked scent.

In this case the toppings were chopped pickle, green onions, corn, kalamata olives, a bit of paprika and mayo.

So I finally discovered that Sriracha sauce is available in Morrisons. Got to say, I'm kinda underwhelmed considering the internet seems to tout it as the best thing since bacon. It's kinda like the medium Encona thai chili sauce but not on par with their hot pepper sauce. However it is good shit and will most likely be in every meal I have for a while now.

Sriracha isn't that hot. It's more about the flavour profile than the heat... it is a damn amazing blend of salty savoury.

I am gonna paint my fried rice red tomorrow. I think I texted Joey a pic of some lasagna that was simply a vehicle for Sriracha some months back...

Yeah it's nice, I think I was just disappointed it tastes pretty much the same as the encona sauce I've been getting for ages :red: At least it was cheap, and still delicious. Hot sauce is always an investment for the future satisfaction of your taste buds.

It must be some odd Sriracha! It should be much sweeter than encona and a lot less vinegary too. There is a cash and carry over from where I work which sells the extra garlic, extra chilli variant which is awesome.

If you're after some burn while maintaining high flavour get to ASDA and buy this:

I've not found any proper cock sauce in the UK :(
Best I have found is flying goose brand, who make the aforementioned extra garlic breath ruiner :eyebrows:
