I am working on refining my jambalaya. Its pretty much getting to how I want it to unveil to people. Now with added celery, kidney beans, scotch bonnets and lime.

It was a nice, sunny day so I revisited my chicken autopsy dish and gave it a few tweaks.

Chicken Autopsy, you will need
6 chicken thighs or whatever
2 red onions
1 red pepper
chillies to taste, I used 5 or so regular chillies
2 scotch bonnets/habs
garlic to taste, I used 3 cloves
soy sauce
oyster sauce
reggae reggae sauce. dont know if you can get that in the states but its a jerk sauce sort of thing

Cut the skin off the chicken
In a large oven safe pan brown the chicken and set to one side
finely slice the onion (do not dice, it need to form a chutney) and fry it. I use a mandoline blade set to about 1mm or so.
chop the garlic, chillies and bonnets and add when the onions have softened. I use the mandoline to get the bonnets real fine.
slice the pepper. again i used the mandoline but set a bit thicker.
add a glug of soy sauce, oyster sauce and reggae reggae sauce. add a bit of scotch bonnet hot sauce too if you want to fire it up.
give everything a good stir on a medium/high heat and add a pinch of sugar and salt. everything should start to melt a little and form a chutney like texture.
add the chicken back in for while and give it a good coating in the chutney.
stick the whole thing in the oven at 160-170°C for 20 minutes of so. stir half way through perhaps

serve with rice and peas or salad. i rocked rice and peas today. I would have taken pictures but my phone sucks and it all just looks brown anyway :poop:

Thanks man. The mandoline really makes it much easier. Totally happy with that purchase. sober operation only though or I will lose a finger tip. Turned out pretty spicy too and its not crazy loaded with chillies.

I used to live with a Thai girl with an odd sense of humour :lol:

10 minute salmon steaks

A couple salmon steaks
Salt
Pepper
Random "Italian" herb mix (parsley, basil, oregano, thyme)
Maybe some garlic
Olive Oil

1. Season salmon to taste (I put it a decent amount of pepper and herbs)
2. Heat a pan on Medium-High with a bit of olive oil (larger pan if you are making more then one).
3. Cook Salmon for 2-3 minutes per side or until middle is transparent (between raw and cooked).
4. Simultaneously make you favorite side dish.
5. Open a beer/bottle of white wine and enjoy!

This one is simple.

Grill sausage
In a pan, cook up onions, potatoes, and peppers in olive oil and white wine.
And now you're done.

Not a recipe but an ingredient...

If you dig green onions as an almost raw vegetable that goes on other stuff you gotta try green garlic. It's the garlic that sprouts form the bulb. It tastes garliccy but it's much more gentle, you can use it almost raw without offending most people. Shit's gnar.

It's pretty badass, gotta say. Now, I've only received green garlic from, well, having forgotten about some garlic that was stashed away, but it is in fact tasty and not to be disposed of. :nods: :snax:

Also, anyone offended by garlic needs to be beaten repeatedly. :cop:

Baked ham sandwiches.


Kings Hawaiian rolls , mayo, sriracha, prosciutto, mozzarella , and smoked ham. Drilled butter on top of the sandwich after.

Been trying my hand at BBQ sauces lately. Here's a version that I'm starting to like. It's a tomato/vinegar based sauce that's sweet and spicy.

Here's the ingredients:
1 onion
Cayenne pepper, paprika, basil, salt, pepper, garlic (smashed and chopped), and fresh jalapenos
Red apple cider vinegar, malt vinegar, and Worcestershire sauce
About a cup of brown sugar, and 2 tablespoons of honey. (Adjust the amounts according to how spicy the sauce is.)
6 oz tomato paste and 8oz diced tomatoes

Add a can of beer to that sauce, throw it in a crock pot with some ribs and slow cook some delicious delicious ribs.

1 egg mixed with 2 Tbsp (25 mL) water for glazing


Directions
Pastry

Combine flour with salt. Cut in butter and shortening until mixture is a roughly even crumbly texture. Add lemon juice and water and blend just until dough comes together.
Shape into a disc, wrap and chill for 30 minutes. While pastry is chilling, prepare filling.

Filling

Cook potatoes in an uncovered pot of salted water until tender and drain. Roughly mash potatoes and set aside to cool.
In a large sauté pan or skillet, sauté beef, pork and/or veal over medium heat until no longer pink. Drain off excess fat, add onions, carrots and seasonings and sauté until tender, about 10 minutes.
Add cider and water and bring up to a simmer. Let mixture simmer for about 15 minutes, until most of liquid is absorbed. Remove from heat, stir in potatoes and cool to room temperature. This can be prepared a day in advance.
Preheat oven to 375 °F.
On a lightly floured surface, cut dough in half, roll out to just less than ¼-inch (.5 cm) thickness and line an 8-inch (20 cm) springform pan. Fill with tourtière filling.
Roll out remaining dough, cut a hole in center (for steam to escape) and place on top of filling. Pinch edges of crust together and brush with eggwash. Bake for 40 to 45 minutes, until pastry is a rich golden brown. Let cool 5 minutes, then remove from pan and serve.
Tourtière can be made up to 2 days in advance and reheated in a 300 °F oven.



I like to add a layer of cheddar cheese and sauteed mushrooms.

I wish we had some bourbon in the house for that. :hitler:

I made ribs with this the other day and they were great. Let them marinade in the sauce for a while then threw em on the grill. :mexican:
