Currently, my favorite is MF Doom and his dozens of side projects. He is slick as fuck with word bending, like, i don't know of anyone better. Anywhere.
Annnnd he is maybe the closest with his production to the kind of sources and utilizations i dig for my own stuff. I am always recognizing random samples and shit from my cheeselounge musical travels, all over his trax.
Hard to pick single songs, but Mmmm... Food, and the Viktor Vaughn records are both extra excellent.
I won't even post videos(too hard to choose), but here is a pretty good one of Mos Def(also a badass) talking about why Doom is Bast.
He blasts of a bunch of classic examples from various Doom tunes.
IMO, everyone needs to hear all of it. And take some time to figure out what is being said because he is fucking SLICK.

BUT. I would say start with MM..Food?, Vaudeville Villain, and maybe the Madvillain record for a mini cross section.
Later on, if you dig what he does, he ALSO has released a huge portion of his tracks as just the instrumentals he made for them, as "Metal Fingers", under the albums series name of Special Herbs (there are like nine volumes of them). It is interesting to hear them stripped out without the vocals, you start to hear a lot of the more esoteric samples that are less obvious with someone rapping over the top.

OH. Another hip hop rekkid that everyone who digs the style should have is The Cold Vein, by Cannibal Ox.
Cool production, and excellent words. Vast Aire has a way with phrases that is similarly off-kilter like some of the Doom stuff, but distinctly unique.

Oh, and Snaxo, further regarding MF Doom.
1. The 'regular' "MF Doom" stuff, is a general mix of goofy and serious, with Doom doing most of the beats, and lots of 70s rock and fusion sorts of samples. 2. The "Viktor Vaugn" stuff, is (generally) a darker electonic sorts of noise production, some weird mechanical sounds, and well, some more 70s cheese samples. But an overall darker vibe, and a little less goofing off with the lyrics. 3. The "DangerDoom" stuff is pretty goofy. Lots of Cartoon Network samples and a generally brighter vibe to it. 4. The "Madvillain" stuff is almost like an odd sort of cross between the Viktor Vaughn stuff, and the DangerDoom stuff. 5. He also has done some stuff calling himself "King Geedorah". This stuff, is a pretty eclectic mix of styles that is difficult to classify. I almost feel like this is just what he does with all of the random production he does that doesn't "fit" on his other personas' records.
Like i said, my favorites are probably the Viktor Vaughn stuff, then the normal Doom stuff, then the Madvillain stuff. Also like i said though, i really like pretty much ALL of it.

I listened to a lot of Wu back in the day, especially 36 chambers and RZA/Bobby Digital and GZAs solo stuff.

Hey Devin, have you heard the mashups that someone did with the Doom instrumentals and a bunch of Wu Tang raps? It is called Enter The 36 Chambers Of Doom. Word on the street is that it is fan-made, not actually a Doom thing, but parts of it are really well done, like it totally mixes up some of the flow of the raps almost so that it is phrased in the wacky way Doom or Vast Aire might be more inclined to deliver the lines.
I didn't look very hard but this might be the only one on utube. Not the best example, IMO:
But is is worth checking out for an interesting angle on the Wu Tang stuff.
ACTUALLY. On that note, Dangermouse's Grey Album is also pretty fucking sweet.
